The luck of the Irish can belong to both parents and children this St. Patrick’s Day with these healthy and festive shamrock tostadas. Try this kid-friendly kitchen recipe and let your children help make a tasty meal to celebrate!

Ingredients

  • Green bell pepper

  • Cheddar cheese

  • Mini corn or flour tortillas

Instructions

Step One

Lay the green bell pepper on its side to find a three-lobed shamrock shape. If your pepper has four lobes, you have a lucky clover! Start by slicing off the top or bottom of the pepper.

Step Two

If you are not planning to use the entire bell pepper, begin with the bottom section, which may produce better clover shapes. Use the remaining pepper pieces to cut small stems.

Step Three

Place a slice of cheddar cheese on top of a mini corn or flour tortilla. Add a green shamrock-shaped pepper slice and a pepper stem on top of the cheese.

Arrange the tortillas on a baking tray and broil them in the oven until the cheese melts. Allow the tostadas to cool before serving, and supervise children around the oven and hot tray.
